The Reno-Sparks Chamber of Commerce has partnered with greenUP! to offer a Green Dining Establishment program, modeled after greenUP!’s successful Green Dining program in Carson City. Through this partnership, Chamber Member businesses are eligible to receive free technical support and guidance on how to reduce waste, save money, and gain recognition in the community. The flagship Green Dining establishments for this new initiative included Buenos Grill, Squeeze In, Great Full Gardens, and the Great Basin Brewing Company restaurant locations throughout Reno and Sparks.

Great Basin beer has the distinction of coming from both the oldest and greenest brewpub in the state of Nevada. Operating since 1993, Great Basin Brewing Company serves up delicious food to pair with their impressive beer list. Customers can sip with satisfaction knowing that all of the spent grain from the brewing process is either incorporated back into the bread and pizza to create tasty doughs, or donated to feed local cows. Repurposing grain from the brewpub keeps over 300 tons of waste out of the landfill each year.

The kitchens at Great Basin take the “Farm-to-Table” concept one step further, as the beef from these cows are later harvested and sold in the restaurants, creating a “Tank-to-Farm-to-Table” closed loop system! Joining the local beef on the menu is a list of other local ingredients, intentionally sourced close to home in order to support the local economy and lessen the emissions required in shipping items to the kitchen.

Finally, guests can dine in energy efficient comfort at the Great Basin locations, with efficient on-demand heating systems, programmable thermostats, and LED light bulbs running on timers. Thank you, Great Basin, for your passion for keeping our local dining scene green! 

Great Full Gardens is a hub for eaters of any type, serving plant-based, omnivore, Paleo, gluten-free, or vegan meals to fill the belly and soothe the soul. Diners will immediately notice a diverse and creative menu that is overflowing with healthy options, though beyond the pages of the menu there are plenty of clues that this restaurant operates with both people and the planet in mind. Customers are greeted with a smile and seated with a tall glass bottle to pour water from at their table. This self-serve water technique is a small but surprisingly effective way to conserve water, by encouraging diners to only pour what they will actually drink.

Around the restaurant and kitchen, many steps are taken to encourage efficiency and reduce waste. Customers are encouraged to reduce and reuse where possible, the back shelves are stocked with compostable take-out ware, the thermostats are programmed to reduce unnecessary energy usage, and their Organic Cold Press juices are sold in glass bottles.

Beyond the restaurant, the Great Full Gardens gives back to their community, donating greenhouses to schools through a partnership with local non-profit Root Education. This program encourages locally grown, healthy food where it is needed most.
